Rustic Italian chicken stew cooked with tomatoes, peppers, herbs and garlic.

Ingredients

  • 6 Chicken thighs
  • 2 cans Chopped tomatoes
  • 1 Red pepper
  • 1 Onion
  • 3 cloves Garlic
  • 100 g Olives
  • 2 tbsp Olive oil
  • 1 tsp Oregano

Instructions

    Heat olive oil in a large casserole dish over medium-high heat.

    Season the chicken thighs well and brown them on both sides until golden, then remove temporarily.

    Cook sliced onion and red pepper in the same pan until softened.

    Add garlic and oregano and cook briefly until fragrant.

    Pour in the chopped tomatoes and stir well, scraping up any browned bits from the base of the pan.

    Return the chicken to the casserole and add the olives.

    Cover and simmer gently for 35–40 minutes until the chicken is tender and fully cooked.

    Taste and adjust seasoning before serving with crusty bread or pasta.
