Soft potato gnocchi tossed in fresh basil pesto with parmesan cheese.

Ingredients

  • 500 g Potato gnocchi
  • 4 tbsp Basil pesto
  • 50 g Parmesan
  • 150 g Cherry tomatoes
  • 1 tbsp Olive oil
  • 1 handful Fresh basil

Instructions

    Bring a large pan of salted water to the boil.

    Cook the gnocchi until they float to the surface, usually after 2–3 minutes.

    Meanwhile, heat olive oil in a frying pan and lightly cook the cherry tomatoes until softened.

    Drain the gnocchi carefully and add them directly to the frying pan.

    Stir through the basil pesto until the gnocchi are fully coated.

    Add grated parmesan and toss gently.

    Scatter over fresh basil leaves before serving immediately.
