Season the chicken thighs generously with salt and black pepper.

Heat olive oil in a large casserole pan over medium-high heat and brown the chicken on both sides until golden.

Remove the chicken and set aside while preparing the sauce base.

Cook sliced onion and peppers in the same pan for 6–8 minutes until softened.

Add garlic and Italian herbs and cook briefly until fragrant.

Pour in the red wine and allow it to simmer for several minutes to reduce slightly.

Add chopped tomatoes and olives and stir everything together thoroughly.

Return the chicken to the pan, ensuring it is partially submerged in the sauce.

Cover and simmer gently for 35–40 minutes until the chicken becomes tender and the sauce thickens.
