Preparation

Ingredients

  • 700 g Chicken breast
  • 1 Red pepper
  • 1 Green pepper
  • 2 Onion
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • 400 g Chopped tomatoes
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Garam masala

Instructions

    Dice the chicken breast into chunks and season lightly with salt.

    Heat oil in a large pan and cook the chicken until sealed and lightly golden, then remove and set aside.

    Add sliced onions and peppers to the same pan and stir-fry for 5–6 minutes until softened but still slightly crisp.

    Add garlic and ginger and cook briefly until fragrant.

    Stir in cumin, paprika and garam masala, coating the vegetables evenly.

    Return the chicken to the pan and pour in the chopped tomatoes.

    Simmer gently for 15 minutes until the chicken is cooked through and the sauce thickens.

    Serve with basmati rice or naan bread.
