Ingredients

  • 500 g Chicken breast
  • 8 Tortillas
  • 500 ml Enchilada sauce
  • 200 g Cheddar cheese
  • 1 Onion
  • 3 cloves Garlic
  • 1 tbsp Olive oil
  • 1 tsp Cumin

Instructions

    Preheat the oven to 190°C.

    Cook the chicken breasts in a frying pan with olive oil until fully cooked through, then shred using two forks.

    Finely chop the onion and cook gently for 5–6 minutes until softened.

    Add garlic and cumin and cook for another minute until fragrant.

    Mix the shredded chicken with half of the enchilada sauce and the cooked onions.

    Fill each tortilla with the chicken mixture and roll tightly.

    Place the rolled tortillas seam-side down into a baking dish.

    Pour the remaining enchilada sauce over the tortillas and top generously with grated cheese.

    Bake for 20 minutes until bubbling and golden.

    Serve with sour cream, rice or fresh guacamole.
