Ingredients

  • 500 g Chicken breast
  • 8 Tostada shells
  • 1 can Chopped tomatoes
  • 1 Onion
  • 3 cloves Garlic
  • 2 tbsp Chipotle paste
  • 1 tbsp Olive oil
  • 1 small head Lettuce

Instructions

    Cook the chicken breasts in simmering water for 15–20 minutes until fully cooked.

    Remove the chicken and shred finely using two forks.

    Meanwhile, heat olive oil in a saucepan and cook the sliced onion until softened.

    Add garlic and chipotle paste and cook for another minute.

    Pour in chopped tomatoes and simmer gently for 10 minutes until slightly thickened.

    Add the shredded chicken to the sauce and stir thoroughly to coat.

    Warm the tostada shells briefly in the oven.

    Top each tostada with shredded lettuce and smoky chicken tinga before serving.
