Crispy roasted potatoes cooked with garlic, lemon and oregano in traditional Greek style.

Ingredients

  • 800 g Potatoes
  • 2 Lemon
  • 5 cloves Garlic
  • 80 ml Olive oil
  • 250 ml Vegetable stock
  • 2 tsp Dried oregano

Instructions

    Preheat the oven to 200°C.

    Peel and cut the potatoes into large wedges and place them in a roasting tray.

    Mix together olive oil, lemon juice, crushed garlic, oregano and vegetable stock.

    Pour the mixture over the potatoes and season generously with salt and pepper.

    Roast for 50–60 minutes, turning once or twice during cooking.

    Allow the liquid to reduce slowly so the potatoes become golden and crisp while remaining soft inside.

    Spoon some of the roasting juices over the potatoes before serving.

    Serve alongside grilled meats, fish or salads.
