Mediterranean skewers with halloumi, peppers, courgettes and red onion grilled until lightly charred.

Ingredients

  • 250 g Halloumi
  • 1 Red pepper
  • 1 Yellow pepper
  • 1 Courgette
  • 1 Red onion
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 Lemon

Instructions

    Cut the halloumi and vegetables into evenly sized chunks.

    Place the vegetables into a bowl and toss with olive oil, oregano, salt and pepper.

    Thread the halloumi and vegetables alternately onto skewers.

    Preheat a grill pan or barbecue over medium-high heat.
  5. 5
    Cook the skewers for 10–12 minutes, turning frequently, until lightly charred and golden.

    Squeeze fresh lemon juice over the skewers before serving.

    Serve alongside couscous, salads or warm pita bread.
