Ingredients

  • 300 g Penne pasta
  • 2 Chicken breast
  • 250 ml Double cream
  • 1 Red pepper
  • 1 Onion
  • 2 tbsp Cajun seasoning
  • 50 g Parmesan
Cooking

Instructions

    Cook the pasta in salted boiling water until al dente, then drain and reserve a little pasta water.

    Slice the chicken into strips and coat thoroughly with Cajun seasoning.

    Heat oil in a frying pan and cook the chicken until golden and cooked through.

    Add sliced onions and peppers and cook until softened.

    Pour in the cream and simmer gently until slightly thickened.

    Stir in parmesan cheese until melted into the sauce.

    Add the cooked pasta and toss until fully coated, loosening with reserved pasta water if needed.

    Serve immediately with extra parmesan on top.
