Ingredients

  • 340 g Corned beef
  • 600 g Potatoes
  • 1 Onion
  • 30 g Butter
  • 1 handful Parsley
  • 1 tsp Black pepper

Instructions

    Peel and dice the potatoes into small cubes, then boil for 10 minutes until just tender.

    Drain the potatoes thoroughly and allow them to steam dry.

    Heat butter in a large frying pan and cook the chopped onion until soft and lightly golden.

    Add the potatoes and fry until crisp and browned on the outside.

    Dice the corned beef and stir it gently into the pan.

    Continue cooking until the corned beef begins to crisp slightly around the edges.

    Season with black pepper and scatter with chopped parsley before serving.

    Serve with baked beans or fried eggs for a traditional meal.
