Ingredients

  • 4 Chicken breast
  • 150 g Panko breadcrumbs
  • 100 g Flour
  • 2 Eggs
  • 300 g Rice
  • 1 Onion
  • 1 Carrot
  • 2 tbsp Curry powder
  • 600 ml Chicken stock

    Cook the rice according to packet instructions and keep warm.

    Flatten the chicken breasts slightly until even in thickness.

    Coat each chicken breast in flour, beaten egg and finally panko breadcrumbs.

    Heat oil in a frying pan and fry the chicken for 4–5 minutes on each side until golden and fully cooked.

    Meanwhile, prepare the curry sauce by cooking chopped onion and carrot in a saucepan until softened.

    Add curry powder and stir well for another minute.

    Pour in the chicken stock and simmer for 15 minutes until the vegetables are tender.

    Blend the sauce if desired for a smoother texture.

    Slice the crispy chicken and serve over rice with the curry sauce spooned generously alongside.
